We all love tasty treats at Christmas time so why not make them delicious and healthier for you?
One of my favourite raw christmas treat is this divine creation called the Nanaimo bar. It is a coconut chocolate bar, raw style!
I know you are going to love this too…try it and enjoy with less guilt and more pleasure!
INGREDIENTS... LETS DO IT!
1) For the base…
½ c dates (soaked 1/2hr)
½ c figs (soaked 1/2hr)
½ c raw cacao powder (or regular cocoa powder)
½ c unsweetened shredded coconut
½ c almonds
2 tbs coconut oil
Process the above in your food processor until it all comes together. Start with almonds, add dates, figs & everything else. Press the mixture into your lined loaf pan, flatten the top and put in fridge.
2) Middle layer…
Process all ingredients in your food processor until smooth. The mixture will seem a bit moist, that’s only because the coconut oil has melted from the heat of the food processor. Don’t worry, it all works out. Pour the mixture over your base and smooth out the top. Place it all in the freezer for about 15 minutes.
3) For the top chocolate layer…
¼ c of raw cacao powder
4 tbs of coconut oil
¼ tsp of vanilla powder (optional)
Place the ingredients into a stainless steel bowl and rest the bowl over a pot of simmering water just long enough for the oil to melt. In warm weather you can just stir all the ingredients together until the mixture is smooth. No need for heating. Give it all a good stir and drizzle it over the top of the first two layers. Because the first two layers have been in the freezer, you’ll want to spread the chocolate fairly quickly so that it doesn’t harden unevenly. Slice with dry knife. Store in fridge.
